Ordering food in Istanbul isn't just about saying "vegan" or "gluten-free," ingredients aren't always obvious, and if you have celiac disease, how food is prepared matters as much as what's in it. VeganIstanbul.com has prepared a guide and critical warnings for you.

🌱 Vegan
Say this:
I'm vegan. I don't eat meat, chicken, fish, milk, butter, yogurt, cheese, eggs or honey. Does this dish, its sauce or stock contain any of these?
Show this in Turkish:
Veganım. Et, tavuk, balık, süt, tereyağı, yoğurt, peynir, yumurta ve bal tüketmiyorum. Bu yemekte, sosunda veya suyunda bunlardan biri var mı?
Watch out for:
- 🧈 Butter or yogurt hiding in rice, bulgur, soups, meze and sauces
- 🍗 Meat or chicken stock in dishes that look meat-free
- 🥚 Eggs and cheese in pastries, pide, salads and vegetable patties
- 🍯 Honey in granola, desserts and ready-made sauces
"Meat-free" ≠ vegan. Always double check.
Close the loop:
No animal products at all, please. Lütfen hiçbir hayvansal ürün kullanmayın.
🥬 Vegetarian
Saying only "I don't eat meat" can leave chicken and fish on the table. Name all three.
Say this:
I'm vegetarian. I don't eat meat, chicken or fish. Does this dish, its sauce or stock contain any meat, chicken or fish?
Show this in Turkish:
Vejetaryenim. Et, tavuk ve balık yemiyorum. Bu yemekte, sosunda veya suyunda et, tavuk, balık ya da bunların suyu var mı?
Watch out for:
- 🍲 Rice, bulgur, lentil or vegetable soup made with meat/chicken stock
- 🫑 Dolma and sarma sometimes containing meat
- 🐟 Meze that look plant-based but include fish or seafood
- 🥫 Sauces with hidden meat or fish-based ingredients
Vegetarian dishes may still contain eggs and dairy, mention it separately if you avoid them too.
🌾 Gluten-Free (Celiac Disease)
A gluten-free preference isn't the same as celiac disease. If you have celiac, you need to check the ingredients and how the dish is prepared, shared oil, utensils or surfaces can be enough to cause a reaction.
Say this:
I have celiac disease. I cannot eat gluten or food contaminated with gluten. Does this dish contain wheat, flour, breadcrumbs, bulgur, barley, rye, oats that are not certified gluten-free, or another source of gluten? Is it prepared separately with clean equipment?
Show this in Turkish:
Çölyak hastasıyım. Gluten veya glutenle temas etmiş yiyecek tüketemiyorum. Bu yemekte buğday, un, galeta unu, bulgur, arpa, çavdar, glutensiz olduğu doğrulanmamış yulaf ya da başka bir gluten kaynağı var mı? Ayrı bir alanda, temiz ekipmanla hazırlanıyor mu?
Four follow-up questions to ask:

"Wheat-free" ≠ "gluten-free." Barley, rye and other grains carry gluten too. The Celiac Disease Foundation recommends skipping a dish entirely if the ingredients or prep method can't be verified. Source: celiac.org
Cross-contact can happen through shared fryers, toasters, cutting boards and utensils, those "gluten-free" fries might still be cooked in the same oil as breaded chicken.
⚠️ One Last Question
Don't rely on a menu symbol or a dish's name alone. If your server hesitates, ask:
Could you please check with the kitchen or chef? Lütfen mutfağa veya şefe sorar mısınız?

For celiac travelers: if the kitchen can't give you a clear answer, skip the dish. It's always the safer call.
