🌾 1. Don’t Just Say “Gluten-Free”
“Glutensiz” means gluten-free, but it may be understood as a dietary preference rather than a medical necessity. For celiacs, make the reason clear.
Say:
“Çölyak hastasıyım. Glutenli ve unlu ürünleri yiyemem.”
I have celiac disease. I cannot eat products with gluten and flour.
If necessary:
“Çok az miktarda bile glutenli veya unlu ürün yiyemem.”
I cannot eat even a very small amount of products with gluten or flour.
🍲 2. Always Ask About the Soup
Mercimek çorbası, red lentil soup, may look completely gluten-free, but flour is sometimes used to thicken it.
Ask:
“Bu çorbada un var mı?”
Does this soup contain flour?
Never judge a soup by appearance alone.
🍚 3. Know Your Pilav
Pirinç pilavı is rice. Bulgur pilavı is wheat and is not gluten-free.
But even rice deserves a quick ingredient check, especially if stock or other additions are used.
Ask:
“Bu pirinç pilavı glutensiz mi?”
Is this rice pilaf gluten-free?
🍟 4. Ask About the Fryer
A potato may be gluten-free. The frying oil may not be safe for a celiac.
Fries can share oil with breaded or flour-coated foods, so ask before ordering.
“Aynı yağda unlu ürünler kızartılıyor mu?”
Are foods containing flour fried in the same oil?
🥖 5. Bread Crumbs Matter
Bread is everywhere in Istanbul, on restaurant tables, beside soups and around breakfast spreads. For celiacs, those crumbs matter.
Say:
“Lütfen ekmek koymayın.”
Please don't serve bread.
And if necessary:
“Yemeğime ekmek değmemesi gerekiyor.”
Bread must not touch my food.
🔪 6. Gluten-Free Ingredients Don’t Mean a Celiac-Safe Kitchen
A naturally gluten-free dish can still come into contact with flour, bread crumbs, cutting boards, knives or cooking surfaces. VeganIstanbul's own Istanbul tips similarly emphasize shared oil and preparation surfaces when eating gluten-free.
Ask:
“Ayrı tava, bıçak ve kesme tahtası kullanabilir misiniz?”
Can you use a separate pan, knife and cutting board?
🧆 7. Çiğ Köfte Is NOT Your Emergency Food
For vegan travelers, etsiz çiğ köfte can be an easy Istanbul option. For celiacs, it isn't: its main ingredient is bulgur - wheat.
The same warning applies to kısır, another popular bulgur-based dish.
Remember:
Bulgur = wheat = not gluten-free.
🍢 8. Be Careful With Köfte
Meat doesn't contain gluten, but köfte recipes may include bread or bread crumbs.
Ask:
“Köftenin içinde ekmek veya galeta unu var mı?”
Does the köfte contain bread or breadcrumbs?
Don't assume grilled means gluten-free.
🫒 9. Explore the Zeytinyağlı Counter Carefully
Traditional zeytinyağlılar or olive-oil vegetable dishes can offer plenty of naturally gluten-free possibilities: beans, artichokes, vegetables and some stuffed dishes.
But recipes vary, and cross-contact is still possible.
Ask:
“İçinde un veya bulgur var mı?”
Does it contain flour or bulgur?
🥐 10. Learn Istanbul’s Wheat Vocabulary
Some words should immediately put a celiac traveler on alert:
Bulgur cracked wheat
Un flour
Ekmek bread
Galeta unu breadcrumbs
Yufka thin wheat dough
Börek pastry
Simit sesame bread ring
Pide / lahmacun wheat-based flatbreads
Knowing these words can be more useful than trying to translate an entire menu.
👆 11. Ask About Ingredients, Not Just the Label
If “Bu glutensiz mi?” (Is this gluten-free?) produces an uncertain answer, get specific:
“İçinde un var mı?” Does it contain flour?
“İçinde bulgur var mı?” Does it contain bulgur?
“İçinde galeta unu var mı?” Does it contain breadcrumbs?
Specific questions often get clearer answers.
🇹🇷 12. Save This Sentence on Your Phone
When communication gets difficult, show the server this:
“Çölyak hastasıyım. Bu bir tercih değil. Buğday, bulgur, arpa, çavdar ve gluten içeren hiçbir şey yiyemem. Yemeğime ekmek veya un temas etmemesi gerekiyor.”
I have celiac disease. This is not a preference. I cannot eat wheat, bulgur, barley, rye or anything containing gluten. Bread or flour must not come into contact with my food.
