Simit is one of Istanbul’s easiest breakfasts or snacks to eat on the move. Its simple appearance can be misleading, however: bakery variations, filled products and café versions may use different dough, coatings or additions.
What is in registered İstanbul Simidi?
The Turkish Patent and Trademark Office registered İstanbul Simidi as a geographical indication in October 2025. Its specification provides a documented baseline for the product made under that name in Istanbul. It is not a universal recipe for every simit sold in Turkey.
According to the registration, İstanbul Simidi is made with wheat flour, water, salt, fresh yeast, fruit molasses and sesame. The dough contains flour, water, yeast and salt. It is shaped into a double-strand ring, dipped in a room-temperature molasses solution, coated with sesame and baked. The permitted molasses may be made from grape, mulberry, fig or carob.

Why can other simit recipes be different?
The geographical indication applies specifically to İstanbul Simidi produced according to the registered method. A neighbourhood bakery, café, hotel buffet, packaged product or regional simit may follow another recipe.
Some versions can contain milk, yoghurt, butter, margarine or egg in the dough. Egg or milk may also be used as a surface wash. Filled and sandwich-style simit can contain cheese, cream cheese, meat, egg, chocolate or sauces even when the bread itself is plant-based. The word sade means plain, but it does not prove how the dough or coating was made.
Pekmez itself is fruit molasses and is plant-based. Still, the presence of pekmez does not rule out animal-derived ingredients elsewhere in the product.
Vegan simit checklist
- Dough: Ask whether it contains milk, yoghurt, butter, margarine or egg.
- Surface and glaze: Confirm that the simit is coated with fruit molasses rather than egg or milk.
- Fillings and toppings: Choose an unfilled product unless every filling and sauce has been checked. Cheese, cream cheese, egg and milk chocolate are common additions.
- Packaged products: Read the full ingredient and allergen statements; names such as “plain” or “gluten-free” do not mean vegan.
- Allergies: Traditional İstanbul Simidi contains wheat and sesame. Vegan status is not an allergy or cross-contact guarantee.

- A Bit of Eggo, Beşiktaş: Its current digital menu lists a “Vegan Simit Tabağı” in the vegan section, served with avocado, black and green olives, za’atar vegan cream cheese, tomatoes, cucumber and pepper.
- Rolla GlutenFree: This is an important product-level warning. Rolla’s current gluten-free simit page lists yoghurt and egg in its allergen information. We therefore do not treat that specific simit as vegan. “Gluten-free” and “vegan” are separate claims.
