Lactose-Free Turkish Food and Desserts: What You Need to Know?

In Istanbul, a plate of olive oil-based meze, lentil soup, or pumpkin dessert can be a great start. But when ordering, simply asking “Does it contain milk?” is not enough. The butter added to the pot, the yogurt in the dough, or the clotted cream on top of the dessert are also important.

Here’s a quick guide to make your life easier when reading the menu and ordering.

🔎 First, understand the difference: Lactose-free, dairy-free, and vegan

Lactose is a sugar naturally found in milk. Lactose-free cow’s milk is still a dairy product; it is not vegan and is not suitable for those with milk allergies. Lactose intolerance and milk allergy are different conditions.

A dish that does not contain dairy products also does not contain lactose. However, it is not necessarily vegan as it may contain eggs, meat, or honey. If you are vegan, please specify this separately.

🫒 Start with olive oil dishes (Zeytinyağlılar)

Zeytinyağlı yaprak sarma (stuffed vine leaves), biber dolması (stuffed bell peppers), and taze fasulye (fresh green beans) are traditional options that can be prepared without dairy products. Look for the word “zeytinyağlı” on menus; still, ask about the oil used and whether yogurt is served on the side.

🥣 Ask about Aşure

Traditional Aşure, prepared with wheat, chickpeas, beans, dried fruit, and nuts, is a dessert that does not require milk. Still, confirm the recipe at the place where you get it.

🍯 Being syrup-based does not mean it's dairy-free

Baklava may contain butter or clarified butter (sadeyağ). The name “Kuru baklava” (dry baklava) is also not a guarantee of being lactose-free: Karaköy Güllüoğlu's dry baklava product lists milk and dairy products as allergens.
