🍲 Is Lentil Soup Vegan in Istanbul? What to Ask Before Ordering

Lentils are vegan. The soup depends on the kitchen. Before ordering "mercimek çorbası" in Istanbul, check the stock, the cooking fat and anything poured on top.

Yes, lentil soup can be vegan, but it is not automatically vegan. Mercimek çorbası, Turkish red lentil soup, can contain butter, meat stock or chicken stock even when there is no visible meat. Our traditional Turkish food guide flags these ingredients, including butter sauce added at serving. Vegan İstanbul Dergi

🌱 What makes lentil soup vegan?

A vegan version uses lentils, plant-based ingredients, vegetable oil and water or verified vegan vegetable stock. Onion, carrot, potato and spices may feature, depending on the recipe. Butter and animal stock need to be excluded from the start.

There is no single recipe followed by every kitchen. The Culture and Tourism Ministry’s Konya lentil soup recipe, for example, includes butter in the pot, water or meat stock, and a separate butter-and-pepper topping. This is a regional example, rather than evidence of how every Istanbul restaurant cooks its soup. kulturportali.gov.tr

🗣️ Ask about the pot first

“Does it contain meat?” leaves too much unanswered. Ask specifically about butter, stock and bouillon, then have the server check with the kitchen.

“Mercimek çorbasında tereyağı, et suyu, tavuk suyu veya hayvansal içerikli bulyon var mı? Mutfaktan kontrol eder misiniz?”

Does the lentil soup contain butter, meat stock, chicken stock or bouillon with animal ingredients? Could you check with the kitchen?

Also confirm that no milk, cream or other animal-derived ingredient is used. Our first-time vegan guide explains why naming the ingredients you avoid is more useful than relying on “vegan” alone. Vegan İstanbul Dergi

🧈 “No butter on top” is only half the question

Leaving off a butter topping works only if the soup underneath is already vegan. Butter or animal stock cooked into the pot cannot be removed from your serving.

Once the kitchen has confirmed the base, say:

“Üzerine tereyağı veya tereyağlı sos eklemeyin, lütfen.”

Please do not add butter or a butter-based sauce on top.

The ministry’s recipe illustrates why both checks matter: butter is used during cooking and again at serving. kulturportali.gov.tr

🫒 How can you make sure it is vegan?

When cooking it yourself, you can control every ingredient: use olive oil or another vegetable oil, water or verified vegan stock, and plant-based seasonings. Check any packaged stock or soup mix, and make the pepper topping with oil instead of butter.

At a restaurant, you depend on the kitchen’s confirmation of that day’s batch. If it already contains butter or animal stock, request a separately prepared vegan version if available, or choose another confirmed vegan dish. A request made when ordering cannot change a finished pot of soup.

🌾 Vegan does not mean gluten-free

Some lentil soups contain wheat flour as a thickener. If you have celiac disease, ask about flour, stock ingredients and preparation separately. See our Celiac Tips in Istanbul for the Turkish phrases to keep on your phone. Vegan İstanbul Dergi

📌 Before you order: check what went into the pot, then check what goes on top.
