Hidden Ingredients in Turkish Food: What Vegans and Celiac Travelers Should Check

Butter in rice, flour in soup, bulgur in lentil patties: familiar Turkish dishes can contain ingredients their names never mention. A few specific questions can help you order with confidence

At a restaurant counter, you can see the lentils, vegetables and rice. What you cannot always see is the stock, cooking fat or thickener.

Vegan and gluten-free also require separate checks. A plant-based dish can contain wheat, while a gluten-free dish can contain dairy or eggs.

🥣 Soup: look beyond the lentils

Mercimek çorbası, lentil soup, may contain butter or meat stock. Celiac diners should also ask whether flour was added and whether the soup comes with croutons. Recipes vary, so check the kitchen’s version. Vegan İstanbul Dergi

Ezogelin çorbası traditionally includes bulgur. The Culture and Tourism Ministry’s recipe also includes flour and allows butter or margarine. Using vegetable oil would not remove the gluten. Tarhana çorbası commonly starts with a fermented mixture of yogurt, flour and vegetables; the dairy is already in the dried mixture before cooking begins. ktb.gov.tr

Ask: “Çorbada un, bulgur, tereyağı, et suyu veya tavuk suyu var mı?”

Does the soup contain flour, bulgur, butter, meat stock or chicken stock?

🍚 Pilav: rice is only part of the recipe

Rice itself is naturally gluten-free. Prepared pirinç pilavı, rice pilav, may contain butter or stock. Şehriye, the small wheat pasta mixed into some versions, introduces gluten.

Bulgur pilavı is made from wheat, so it is unsuitable for celiac diners even when prepared entirely with plant-based ingredients. Vegan İstanbul Dergi

Ask: “Pilav şehriyesiz mi? Tereyağı veya et suyu kullanıldı mı?”

Is the pilav without pasta? Was butter or meat stock used?

🌿 Lentil patties: a lettuce wrap does not remove gluten

Mercimek köftesi, lentil patties, can be entirely plant-based, but the traditional recipe includes fine bulgur. The Culture Ministry’s recipe combines lentils, bulgur, olive oil, herbs and tomato paste.

The wheat is inside the patties. Eating them with lettuce instead of bread does not make them gluten-free. ktb.gov.tr

🥒 Vegetable fritters: check the batter

Mücver, usually zucchini fritters, commonly contains egg and flour; some versions include cheese. Removing the yogurt served alongside them cannot remove ingredients already mixed into the batter.

A specially prepared gluten-free version still needs a frying-oil check. Vegan İstanbul Dergi

Ask: “İçinde yumurta, peynir veya buğday unu var mı?”

Does it contain egg, cheese or wheat flour?

🥐 Börek: the filling tells only half the story

A potato or spinach filling does not establish whether börek is vegan. Milk, yogurt, butter or egg may be used in the dough, between the layers or on top.

Ordinary wheat-based börek, gözleme and pide contain gluten, whatever their filling. Vegan İstanbul Dergi

Ask: “Hamurunda, kat aralarında veya üzerinde süt, yoğurt, tereyağı ya da yumurta var mı?”

Is there milk, yogurt, butter or egg in the dough, between the layers or on top?

🍮 Helva: learn the full name

Un helvası uses flour; irmik helvası uses semolina, a wheat product. Both need a dairy check because butter or milk may be used. A vegan semolina helva still contains gluten.

Regional versions add other ingredients: the Culture Ministry’s peynirli irmik helvası recipe contains milk and cheese. “Helva” alone is not enough information to order. ktb.gov.tr

🗣️ For celiac diners, preparation matters too

Shared frying oil, utensils and preparation surfaces can transfer gluten into food made without gluten-containing ingredients. Ask how the kitchen prevents cross-contact. If staff cannot verify the recipe or preparation, choose another dish. Coeliac UK

“Çölyak hastasıyım. Yemek temiz ekipmanla, glutenli yiyeceklerle temas etmeden hazırlanabilir mi?”

I have celiac disease. Can the food be prepared with clean equipment, without contact with gluten-containing foods?

Keep veganistanbul.com’s Turkish ordering phrases on your phone. Ask before the plate is filled, especially when the food has already been cooked in a batch.
